Summer is just around the corner…

Why not try this simple recipe for elderflower cordial. It’s summer in a glass and so easy to make! Enjoy on its own as a refreshing summer drink or why not add it to gin and tonic or a chilled glass of Prosecco for perfect summer cocktails.

Ingredients •          650g sugar
•          1 litre boiling water
•          3 lemons
•          20 elderflower heads – foraged from British hedgerows from May-June or bought via your local      green grocers or farm shop.​
•          30g citric acid (available from​ pharmacies)

Method

Carefully shake the elderflowers to remove any insects ​ – don’t rinse them, as it ​will ​strip the pollen and flavour. Place the sugar into a saucepan, pour in the boiling water and stir until the sugar dissolves. Grate the rind, then slice the ​lemons and add to the pot. Add the citric acid and the elderflowers and stir. Steep for 24–48 hours, then strain ​through a muslin ​into sterilised bottles​.​​ The cordial is ready to drink straight away and will keep in the fridge for up to 6 weeks. ​Alternatively, freeze it in plastic containers or ice cube trays and defrost as needed.​ Dilute with water ​(​still or sparkling depending upon your taste​)​ to create the perfect summer drink​.​
